Terroir

Vineyard located in the golden triangle (Cuers, Puget Ville and Pierrefeu), recognized as one of the best terroirs for the production of Côtes de Provence. Very stony soils, a red sandy clay matrix, allowing perfectly ripe grapes to be obtained while preserving a good balance. The grapes come from agriculture that respects the environment. The Mediterranean climate swept by the Mistral does not generate strong phytosanitary pressure, thus making it possible to limit treatments.

Vinifications 

The harvest is done exclusively at night between 4 a.m. and 9 a.m. to preserve the aromatic potential of the grapes. The plots are checked once a week to pick up at perfect maturity. Rosé and white: The direct pressing of the grapes in the absence of oxygen is followed by fermentation at low temperatures and aging on fine lees to impart richness and complexity. Red: The grapes are destemmed then crushed before being vatted for 3 weeks during which they are worked daily (pumping over…). It is the Master Vignerons of Saint-Tropez who carry out the final stabilization treatments of the wine before it is bottled. This last step is carried out under optimal conditions with the latest generation technical equipment to preserve the quality of the wines.
