Age of vines: 25 years

Vinifications 

Manual harvest in 40 Kg boxes with sorting, pressing of whole grapes for 8 hours, static decanting of the juices for 12 hours, alcoholic fermentation at controlled temperature with indigenous yeasts for 5 months, aging on fine lees until early September then the wine undergoes fine filtration before being bottled. The wine does not undergo any fining, chaptalisation, acidification or enzymage.
